Objectives

The course aims to provide knowledge for the definition, classification, diagnosis of adverse reactions to food. It is also proposed to provide dietetic-nutritional knowledge for prevention and therapy.

Contents

Food and Adverse reactions;
Food allergy, diagnostic tests and therapy;
Position Statment "Allergies and Intolerances";
Foods at high risk for allergen content; FODMAPS;
Lactose intolerance;Nickel allergy and heavy metals;Related Gluten reactions: Wheat allergy;Related Gluten reactions: Non Celiac Gluten Sensitivity;Related Gluten reactions: Celiac disease.
